Jeremiah Inn’s Great Granola Recipe
Guests at Jeremiah Inn Bed and Breakfast exclaim over the yogurt parfait served with a topping of fresh baked granola. They often request the recipe and since I baked a fresh batch today, I thought I would share the recipe while the aroma is still lingering in the kitchen!
In a large mixing bowl, combine: 4 cups oats, 3/4 cup brown sugar, 3/4 cup wheat germ, 3/4 cup bran cereal, 1/2 cup chopped almonds, 1/4 cup coconut. In a separate cup, combine: 1/2 cup honey, 1/4 cup cooking oil, and 1 tsp vanilla. Warm this 30 secs. in microwave. Mix together thoroughly and turn mixture onto a 10 X 15 jelly roll pan (with edges). Bake at 350 for approx 40 mins, but open the oven periodically (perhaps three times) and stir the mixture gently to produce even browning. After baking stir while cooling to avoid “clumping”. Makes 8 to 10 cups. When cool, store in covered airtight container.
Layer two or three flavors of yogurt in a small glass dish and top with the granola. I like to blend plain yogurt with the flavors to reduce “sweetness” and lower calories in the dish. You have a healthy and delicious start to your breakfast!
